Karine Lawrence to Teach Okanagan College Wine Course

Karine Lawrence, Sirocco Principal, has been working for the Canadian and US wine and food industry for over sixteen years. Now, she’s sharing her extensive working knowledge with aspiring winery assistant students at Okanagan College’s Penticton campus.

Karine will be co-teaching one module of the Winery Assistant Certificate Program: WINE24, Quality Control and Public Relations. This module is part of the Winery Assistant Certificate Program offered at the Penticton Campus of Okanagan College. This module addresses the core competencies of the Quality assurance and Quality control specialist within small and large wineries.

The Canadian provincial (BC) and federal regulatory requirements will be discussed, including food safety and quality/product labelling standards. The students will discuss Canadian regulatory requirements for ICB, BC Wines of distinction and BC VQA wines.

This course also focuses on the importance of sensory science in a winery. Scientific sensory methodologies are presented in a workshop format, such as discrimination tests, descriptive analysis tests and consumer tests. The application of these sensory methods is demonstrated using commercial and research examples.

This year’s highlights include a tour of Hester Creek Winery, Keynote by Howard Soon and Demonstration of the Quini Wine App for sensory evaluation.
